Ipswich's record-sized lamington

SIZE matters when you are trying to make the world's largest lamington and they do not come much bigger than this - a 1.3 tonne monster.

More than 400 litres of egg and water, 535kg of sponge mix and 75kg of jam were just some of the ingredients that helped Ipswich create the record-smashing lamington yesterday.

Ipswich Councillor Paul Tully said it took a team of three Billy Mac bakers two days to make the coconut-encrusted creation, which was made to coincide with National Lamington Day.

“This record will be difficult to break given the culinary dexterity needed to put this lamington together,” Cr Tully said.

“It was a massive achievement and one that will give us a permanent connection to the lamington for a long time.”

The lamington was revealed at the Ipswich Turf Club yesterday morning and was witnessed by the treat's namesake, Lord Lamington's, great-grandchildren Alex Scrimgeour and Belinda Leigh.

The pair travelled from the United Kingdom for several National Lamington Day celebrations.

To put the scale of the super-sized cake into context, yesterday's effort was equivalent to about 21,000 standard lamingtons.

It eclipsed the previous world record, a one tonne effort made by Melbourne bakers in 2005.

Ipswich Mayor Paul Pisasale said the $4000 dollar “beauty” had generated interest from around Australia.

“I've been taking calls from radio stations all over, it's given us millions of dollars worth of free publicity,” Cr Pisasale said.

“This has showcased Ipswich business, like Billy Mac's who are receiving a lot of interest thanks to this and it shows that as a city we are prepared to have a bit of fun.

“Leighton Contractors, who put up the money for the lamington, suggested we cut it up and give some of it to the workers on the motorway.

“Car dealer John Grant is also helping us deliver some lamingtons to aged care homes and charities - we have lamington-gate now.”
