Watermelon and feta - a match made in heaven!

NOTHING brings in the warmer seasons like a crisp salad. 

And we've got one that will rock your world. 

Try this watermelon and feta delight for your next dinner party - or just at home this week. 

 

Crisp Watermelon Salad

INGREDIENTS

250g cherry tomatoes halved

1 tbsp balsamic vinegar

50g pitted Kalamata olives chopped finely

Dash of olive oil

Squeeze of lemon

200g watermelon diced or scooped

Handful of fresh basil leaves chopped

Freshly ground salt and pepper

Half a block of feta cheese

METHOD

In a salad bowl, marinade the tomatoes with balsamic vinegar, a pinch of sugar and salt for one hour.

Combine the olives, olive oil, lemon juice and a pinch of black pepper together in a bowl before adding the watermelon.

Drizzle the tomato mixture over the top. Season to taste and scatter with basil and chunks of feta cheese.

Fun fact: Watermelons are about 92% water, but packed with nutrients. Each bite has significant levels of vitamins A, B6 and C, plus antioxidants, amino acids and potassium. Watermelon is also related to the cucumber, pumpkin and squash families making it a vegetable and a fruit!
