THE perfect chicken breast crumbed and pan fried with Schnitz's schnitzel secret is the recipe to success for Orion shopping centre's latest culinary venture.

The franchise is the first of its kind in Ipswich, having grown from a Melbourne schnitzel master in the 1980s to the chicken institution it is today.

"No magician tells their secret and neither does Schnitz," store manager Jade Deegan said.

"That lovely golden brown textures and a lot of other factors that go into it but it's definitely the love and care from the cooks that's the main thing.

"We do have our own secret Schnitz procedures to make sure we get the perfect schnitzel out to you every time. No magician tells their secret and neither does Schnitz."

Mr Deegan was part of the Schnitz success story when it first moved to Queensland and has helped the Orion store grow to a popular schnitzel destination.

"It's a very different experience. It's a big challenge. I get a brand new team which I have enjoyed training up. It's been a hard challenge but really fantastic and rewarding," he said.

"It's been really positive, we've had a lot of feedback. Already I can see customers returning, the community come back time and time again.

"They enjoy the product and how authentic it is but also the customer service, they can see familiar faces because we only hire locally."

The American Dream is a hot menu item but Mr Deegan said his choice was a classic parmigiana with chips and salad

"The passion comes from it being so familiar, it's very much the home cooked meal," he said.

"What sets us apart from everywhere else that does schnitzel is ours is 100% fresh, it doesn't come out of a box of freezer.

"It's just a chicken breast which you crumb up and pan fry, just like you would at home. The freshness and authenticity of the product is really what draws people in."

Visit Schnitz at Orion Springfield from 10.30am daily.
