Rockmelon and prosciutto: a match made in heaven
SOME foods were just made for each other, like rockmelon and prosciutto.
Before you turn your nose up at what sounds like an unlikely combination, give this rockmelon bruschetta a try.

150g goat's cheese
1/2 teaspoon finely grated lemon rind
6 slices sourdough or ciabatta bread
6 slices prosciutto
500g rockmelon sliced thin
Lightly chargrill the bread on barbecue or grill plate.
Spread goat's cheese on top of toast and place one slice of prosciutto on each, followed by a thin slice or two of rockmelon.
Sprinkle the lemon rind on top and finish with a drizzle of balsamic reduction.
Fun fact: The potassium in rockmelon sends oxygen to the brain and slows the heart rate, meaning eating the fruit can have a calming effect.
