WALK past the old Settlers Inn premises in Brisbane St and you will find the latest top-class restaurant at the Top of Town.

The Stumps Hotel, an Australian tapas bar, opens for the lunch crowd today.

General manager Craig Ryder and executive chef Darryl Bradshaw were finalising preparations yesterday ahead of an expected busy opening tonight. Mr Ryder and Stumps Hotel owner Raj Sharma have restored many of the 150-year-old building's features.

Ipswich was ready to embrace a restaurant such as the city had not seen before, Mr Ryder said.

"This is a big-city restaurant that has finally opened in Ipswich offering five-star meals," he said.
