WORLD number one Novak Djokovic is opening a chain of restaurants in his Serbian homeland, and he's planning to serve up something unique on the menu - donkey milk cheese.
The cheese, known as pule, will be one of the key attractions and the Wimbledon champion has gone all out to ensure there will be enough to go round by buying the entire 2013 global output of the Serbian farm which produces it.
Lovers of the rare delicacy pay up to $A612 a pound for it, although it is not clear how much Djokovic will charge for a portion.
The company agreed to commit everything it will produce to the tennis ace, saying he would be a great ambassador for its little-known product.
It takes 25 litres of fresh milk to make a single kilogram of the finished product.
Donkey milk is said to be particularly healthy for humans as it has anti-allergen properties, and contains 60 times more vitamin C than cow's milk.
It is unclear whether Djokovic will eat much of the donkey cheese.
His secretive diet has been credited with turning him into one of the fittest athletes on the planet.
